It’s been really, really hot in New York lately.
How to we keep cool at Zoe?
With traditional Spanish Gazpacho of course!
The perfect snack for summer – served chilled, this soup is refreshing and is sure to keep you cool!
It calls for Spanish sherry vinegar and EVOO so break out the Zoe and get cooking!

We like to serve our Gazpacho in short glasses, that have been in the fridge for a while. The chilly glass keeps the soup cold for longer, and it allows you to see all the colorful goodness in the soup!
Chop up some cucumbers, peppers, onions and tomatoes to make a little salad on the side, and serve with crusty bread to make this snack into a meal!
