9 August 2010Spicy Garlic Shrimp from One of Our Favorite Spanish Chefs!

We just came across this great recipe for Chile Garlic Shrimp by one of our favorite Spanish Chefs, José Andrés!

This recipe was featured in the May 2010 issue of Self Magazine, and we finally got around to trying it out over the weekend – it’s delicious!

You’ll need:

2 tablespoons ZOE SPANISH extra-virgin olive oil
10 cloves garlic, thinly sliced
2 pounds large shrimp, cleaned, shelled and deveined
2 dried red chiles (plus more for garnish, if desired)
2 teaspoons brandy
2 tablespoons chopped fresh parsley

(These quantities make about 8 servings)

Here’s what to do:

Heat oil in a medium sauté pan over high heat. Sauté garlic until browned. This usually takes about 2 minutes.
Add the shrimp and chiles; sauté until shrimp are cooked through, about 4 minutes.
Add brandy and cook 1 minute more. Remove from heat. Transfer to a platter or divide equally among 8 small plates. Sprinkle with parsley, add salt to taste and serve.

These shrimp are perfect for a hot summer evening – serve them alone as an appetizer, or over greens with a few other sides to make a whole meal.
